Tropical notes of passionfruit carried on a marshmallow softness that’s light, airy, and gently sweet. Nothing sharp, nothing heavy: a bright cup that stays soft in the mouth from first sip to last.
It comes from El Jaragual, a family farm in the hills of Amalfi, Antioquia, where Jorge Mira keeps most of the land as forest and grows his coffee slowly under plantain shade. It’s careful, patient work, and you can taste it. When we say marshmallow we mean it has a light and airy sweetness and is soft and pervasive without coating the mouth. Beautiful as filter, endlessly drinkable as espresso through milk, and very easy to love.
Like most of the, let’s say non-classic-washed coffees with high levels of sugar fermentation and complexity in the cup… these coffees benefit from a much longer ‘resting’ time after roasting, often tasting best after four weeks and sometimes even eight to twelve weeks. If anything this is an excuse to stock up on a variety of delicious coffees.
