Chemex filter papers are known for their extremely thick paper weight. What this means in reality is a lighter, more delicate cup of coffee with almost no silt.
If you’re struggling with prolonged brew times it’s worth experimenting with a slightly smaller dose of coffee. If this is happening, your first course of action would be to grind your coffee more coarsely. However, if you don’t have access to a good grinder, an easy hack is to try a 5% less coffee – all the way to a 20% reduction in your ground coffee dose if needed. This will enable the water to flow more freely and avoid ‘choking’.
