This is a coffee that leans all the way into fermentation—bold, fruit-heavy, and unmistakably boozy. The kind of cup that stops you for a second, then pulls you back in.
Grown at 1,680 metres, this Pink Bourbon carries the clarity Huila is known for, but with far more weight and intensity. Expect deep tropical fruit—mango, passionfruit, apricot jam—wrapped in a rich, almost cocktail-like character. There’s a boozy, umami edge that brings to mind something closer to a whisky sour than a classic cup of coffee.
Villa Pastora is named after Álvaro’s mother, who first planted coffee here in the 1980s. Today, the farm is run as a family project, with a focus on careful processing, sustainability, and supporting other producers nearby through shared knowledge and infrastructure.
This lot is naturally processed, with an extended underwater fermentation of 96 hours before drying. That time in fermentation builds depth and intensity, giving the coffee its syrupy fruit and spirit-like character, while still holding a sense of structure in the cup.
The result is expressive and full, juicy, boozy, and a little wild. A coffee for slower moments, when you want something that feels more like an exploration of what coffee can be.
The tropical fruit shines through milk creating an unbelievable flat white, for those who seek out fresh and exciting flavours.
