Pink Bourbon
This natural Pink Bourbon comes from Villa Pastora, a small farm in Palestina, Huila – a region we love for its standout, balanced yet fruit-forward coffees. Grown at 1,680 metres by third-generation producer Álvaro Mora and his family. This lot is bursting with tropical fruit, we’ve found notes of Mango, Passionfruit and Apricot jam. We have also found a boozy umami note that makes this coffee reminiscent of drinking a fruity whisky cocktail like a whiskey sour.
The farm is named after Álvaro’s mother, Pastora Anacona, who planted the first coffee trees here in the 1980s. Her legacy lives on through the Mora Ortega family’s dedication to sustainable practices, community support, and a focus on exceptional quality.
Run as a family effort, Villa Pastora employs sustainable methods and prioritises quality, while also offering fermentation advice and drying services to neighbouring producers. Álvaro is a participant in the Delagua project, helping to share this coffee with a wider audience and bring value back to the region.
This natural lot is fermented underwater for 96 hours, before being mechanically dried and finished in a drying shed. The result is a layered, expressive cup that reflects the care, processing, and varietal behind it. We’ve roasted this to a medium-light profile to preserve clarity and accentuate its juicy character.
