In the heart of the Colombian Co‚ffee Axis, Caldas and Risaralda are known worldwide for producing some of the most exquisite coff‚ee in the world. The area has been declared a Unesco’s World Heritage site for being an exceptional example of a cultural, sustainable and productive landscape – a historic milestone for the country. After being harvested and sorted, the ripe cherries are packed in closed tanks to ferment. The anaerobic conditions encourage the natural fermentation and the creation of microorganisms like lactic bacteria and yeast. These microorganisms are responsible for the sweet and fruity cup of coff‚ee. After being fermented for 120 hours in tanks, the cherries are drained before being laid on raised beds in low lands, where humidity is lower.

In the cup, expect light notes of melon with more intense and inviting flavours of cherry kirsch with honey sweetness over the top.
